Pizzelle Ice Cream Sandwiches

Meet the new staple of ice cream sandwiches: Coop’s!

Drizzled on top or spread in between cookies and ice cream, you’ll be wondering where this addictive addition has been all your life. Our favorite hack? Pizzelle cookies for an exceptional crunch.

Making ice cream sandwiches using pizzelle cookies and Coop's hot fudge is a delicious, easy way to enjoy this classic treat. Here's what you'll need and how to make them:

Ingredients:

Pizzelle cookies (store-bought or homemade)

Your favorite ice cream flavor(s)

Coop's Hot Fudge sauce

Toppings (optional, such as chopped nuts, sprinkles, or mini chocolate chips)

Instructions:

1. Prepare the Pizzelle Cookies:

If you're making homemade pizzelle cookies, follow your chosen recipe and make sure they're fully cooled before using them in your ice cream sandwiches.

2. Soften the Ice Cream:

Take your ice cream out of the freezer a few minutes before assembling the ice cream sandwiches. This will make it easier to scoop and spread.

3. Choose Your Ice Cream Flavor:

Decide which ice cream flavor you want to use for your ice cream sandwiches. You can use one flavor or mix and match to create various combinations.

4. Assemble the Ice Cream Sandwiches:

Lay out half of the pizzelle cookies, flat side up.

Using an ice cream scoop, add a scoop of softened ice cream onto the center of each pizzelle cookie.

If you're using multiple ice cream flavors, you can create layers by alternating scoops of different flavors.

Flatten the ice cream slightly with the back of a spoon or a spatula to ensure it spreads evenly when you assemble the sandwiches.

Take the remaining pizzelle cookies and place them flat side down onto the ice cream and hot fudge.

5. Drizzle hot fudge

Drizzle Coop's Hot Fudge sauce (or your chosen hot fudge sauce) over the ice cream on each pizzelle cookie.

6. Freeze:

Once you've assembled all the ice cream sandwiches, transfer them to a baking sheet or plate and place them in the freezer for at least 1-2 hours to allow the ice cream to firm up.

7. Serve and Enjoy:

Remove the ice cream sandwiches from the freezer and let them sit for a minute or two to soften slightly for easier eating. Store any extras in wax paper in the freezer.

These ice cream sandwiches are a delightful blend of sweet, crispy pizzelle cookies, cold and creamy ice cream, and the rich, chocolaty goodness of Coop's Hot Fudge sauce. They're perfect for a special dessert, a summer treat, or any time you're craving a tasty, customizable dessert.
